Another St. Valentine's Day recipe, this time from the Farm Journal's Complete Pie Cookbook. I thought the Farm Journal was no more, but you can find it online here. These books I use are mostly YEARS old!
Vanilla Cream Pie
1 Baked 8" pie shell
1/2 cup sugar
3 tblsp. flour
1 tblsp. cornstarch
1/4 tsp. salt
1 1/2 cup milk
3 egg yolks, slightly beaten
1 tblsp. butter
1 tsp. vanilla
1 Baked 8" pie shell
1/2 cup sugar
3 tblsp. flour
1 tblsp. cornstarch
1/4 tsp. salt
1 1/2 cup milk
3 egg yolks, slightly beaten
1 tblsp. butter
1 tsp. vanilla
- Combine sugar, flour, cornstarch, and salt in top of double boiler. Mis with wooden spoon. Blend in milk gradually, then add egg yolks. Add butter.
- Place over rapidly boiling water so pan is touching water. Cook until thick and smooth, about 7 minutes, stirring constantly, Scrape down sides of pan frequently.
- Remove from heat. Add vanilla. Stir until smooth and blended, scraping sides of pan well. Pour hot filling into pie shell.
- Note: Quantities may be doubled and filling cooked for 2 (8") pies at the same time.

This weekend I was completely snowed in and the weather was so bad that Betty could not get into work..I stayed 29 hours!
I am working on my next posting...I want to put Turtle into it as well as a few other Blogger kitties!!
