Padre Island

Yesterday we went on the ferry from Aransas Pass to Port Aransas and on to north Padre Island. It was cool enough that, unlike me, I did not wade but a moment in the Gulf. There seemed to be to be fewer birds, but we saw quite a few and identified a couple of new ones. I did get this photo of a Caracara also known as a Mexican Eagle, taking off and a photo of the Gulf. We did see a fellow stuck in his NOT 4-wheeler at about mile 23...where are many signs telling folks not to go on the beach past mile 5 if they are not in their 4-wheelers...but this guy did anyway! I imagine it cost him a bundle...over $ get towed out. We reported him to the rangers because the tide was coming up. It was already at his car when we passed him going back. Someone else had also reported him, so I hope he got off ok. My cousin told me of a guy who got stuck on Padre and went back the next day and the car had washed into the Gulf. Tides aren't high out there, but they are tricky. Anyway, it was a good day. We ate at the Crab-N for supper, and the food, as usual, was excellent! Tried the buger place for breakfast this morning, but Alice Fay's is much better and cheaper, as well!

Whooping Cranes and Aransas

Well, today was glorious. We went to the Aransas National Wildlife Area by boat. We used Pisces Charters going on the Molly Anna. We saw 30+ Whooping Cranes plus loads of other birds. Although it is very dry here, it was beautiful here, clear and warm enough to be pleasant. When we got back we ate supper at Hemingway's Bar and Grill...expensive but worth it! Anway, today was beautiful!

Noel Garland's Vegetable Soup By J.M. HIRSCH of the Associated Press

A friend and fellow genealogist sent me this soup recipe. It sounds delicious!

Rosemary and Ginger Vegetable Soup

(Start to finish 45 minutes, 10 minutes active)

3 tablespoons olive oil

1 large stalk fresh rosemary

2 cloves garlic, minced

2 tablespoons grated fresh ginger

1 large yellow onion, diced

1 green bell pepper, finely chopped

1 red bell pepper, finely chopped

2 carrots, cut into thin rounds

8 ounces (about 2 cups) button mushrooms, stemmed and cut into quarters

2 medium potatoes, cut into small cubes

1/2 small butternut squash, cut into small chunks

4 cups vegetable broth

1 cup crushed tomatoes

Salt and freshly ground black pepper, to taste

4 slightly stale sourdough dinner rolls, cut into cubes

Heat the oil over a medium heat in a medium stockpot.

Use a rolling pin to gently bruise the rosemary by rolling over it several times. Add the entire stalk to the pot. Add the garlic and ginger and cook, stirring frequently, 1 minute.

Add the onion, green and red peppers, carrots, mushrooms, potatoes and squash, then saute 3 minutes, stirring often. Add the broth and tomatoes and bring to a simmer. Lower heat, cover and simmer 30 minutes, or until potatoes are tender.

Taste and season with salt and pepper. Discard rosemary stalk. Ladle soup into serving bowls and stir one dinner roll, cut into cubes, into each.

Makes 4 servings.
